Roasted Brussel Sprout “French Fries”

For those of you that have been missing your starchy carbs with dinner, here is a great recipe to try.

Buy a bag of Fresh Brussel Sprouts in the produce section at HEB (the smaller the sprouts, the better)

Cut the little “mini-stems” off the end of each sprout, and peel off the outer layer of leaves, then cut each sprout in half lenghtwise.

Next, toss your sprouts into a big Ziplock bag, and add some Olive Oil, Sea Salt, and Pepper. Seal the bag, and shake until sprouts are well coated.

Then, dump the sprouts onto a baking sheet lined with foil. Arrange cut-side up on the baking sheet.

Bake in the top half of the oven at 400 degrees until the sprouts start to turn brown/black around the edges (15-20 minutes)

If roasted long enough, the outer layer will be caramalized and a little “crunchy”

If you’re really missing french fries, try dipping these in a little “Paleo Ketchup” when you eat them. . . recipe to follow shortly!
