Sweet Potatoes & Cinnamon Protein Powder

To make the snack, prep your sweet potatoes ahead of time (on your weekly prep day or over the weekend). Just bake a bunch of them in the oven wrapped in foil until they are super mushy and oozing. Then remove the peels and mash up the potatoes and place in the Fridge.

To prepare the snack, just scoop out approx a small palm-sized portion of sweet potatoes and add 1/2 to 1 scoop of protein powder. Stir until well mixed, and that’s it!

Variations: Add in some chopped walnuts or shredded unsweetened coconut if you want to increase the fat level of the snack, or add a little “crunch” to it. This is really good with the “Cinnamon Roll” flavor, but a lot of people also like the “Banana Nut Bread” flavor mixed in.

It is important to point out that all Whey Proteins are Milk-based, and therefore technically in the Dairy family, however for the purposes of our Paleo Challenge we are allowing the use of protein powders that do not have sugar in the ingredients list. Listen to your body though. If you cut out the rest of your dairy, and feel a little “funky” after a serving of protein powder, it would probably be best for you to try switching to an egg white powder that contains no dairy and see if it makes a difference in how you feel. Also remember – the majority of your caloric intake (protein included) should come from WHOLE FOODS, with only minor supplementation as needed.
